Jamaican Curry Chicken

Curry Chicken is a favourite standby in Jamaican cuisine. It's a chicken dish that's cooked low and slow to get all the amazing flavours infused in the chicken and vegetables.

Whenever you feel for a real delicious curry and all the rich flavor in less than 30 minutes. This Jamaican curried chicken makes an ideal dinner if you are craving some Caribbean goodness.

INGREDIENTS:

  • 2 tablespoons vegetable oil
  • 2 stalks spring onion chopped
  • 1 potato diced
  • 2 carrots diced
  • 1 garlic clove, chopped
  • 2 tablespoons Little Jamaica all natural Original curry powder
  • 1 slices habanero pepper
  • 1 tbs Little Jamaica all natural all purpose seasoning
  • 1 teaspoon Little Jamaica Chicken seasoning
  • 3 sprigs of fresh thyme
  • 1 cup water
  • ½ teaspoon salt, or to taste (optional)


Half of chicken, remove skin and cut into bit size pieces. Wash in lemon  water then rinse and drain. Seasoned with the above and leave to sit for 15 minutes to soak it all up.

Step 1
Warm oil in a skillet then add chicken without vegetables. Stir slowly until slightly browned for 10 minutes on low to medium heat.

Step 2
Pour water into the skillet the add diced carrots and potato, reduce heat to low; cover and simmer until chicken is no longer pink at the center, about 30 minutes.

Best enjoyed with roti, steamed rice or rice and peas. Hard foods/ground provisions is a favourite for us islanders with this dish.
