Vegetarian Stir Fried Rice

Ingredients
Bowl of cold cooked Shelly jasmine or basmati rice 
Bell peppers diced
2 carrots diced
Spring onion chopped
Red onion diced
Leek chopped
Broccoli chopped
2 sprigs of thyme
1 tablespoons olive oil
2 tablespoons soy sauce
1 teaspoon Little Jamaica NICE-IT-UP optional.
1 teaspoon mixed sea salt, black pepper, ginger and chilli
1 teaspoon Little Jamaica all purpose seasoning optional.

Directions:
Heat wok for 5 minutes on above medium heat. Add olive oil then chopped vegetables. Stir for 5 minutes then add soy sauce and continue to stir for 3 more minutes. Add rice and stir for 3 more minutes. Sprinkle teaspoon with black pepper, salt, chilli and ginger. Continue stirring for 3 more minutes then serve hot and garnish with fresh thyme leaves.
